To make a delicious mixed grain paratha with moringa powder, here’s a recipe along with serving suggestions:

Ingredients:
– 1 cup mix grain atta,
– 1 tablespoon Le’ayur moringa powder,
– 1 tablespoon Methi Leaves Finely chopped,
– 1 tablespoon Fresh Coriander (Dhania ) Finely chopped,
– 1/4 teaspoon green chillies finely chopped,
– 1/8 teaspoon turmeric powder
– 1/8 teaspoon chilly powder
– 1/4 teaspoon cumin powder
– salt to taste
– Water, as needed
– Ghee or oil, for cooking

Instructions:
1. Soak 1 Table spoon Moring powder in a cup of water and put aside.
2. In a mixing bowl, combine all other ingredient, mix well.
3. Gradually add moringa along with water, knead the mixture into a smooth dough using required plain water. The dough should be soft but not too sticky. Let it rest for 15-20 minutes.
4. Divide the dough into equal-sized balls,
5. Take one dough ball and roll it out into parantha,
6. Heat a tawa or skillet over medium heat. Place the rolled-out dough circle onto the hot tawa.
7. Cook for about 1-2 minutes on one side until you see bubbles forming.
8. Flip the paratha and cook the other side. Apply some ghee or oil on the cooked side.
9. Flip again and apply ghee or oil on the other side. Press the edges gently with a spatula to ensure even cooking.
10. Cook until both sides are golden brown and crispy.
11. Repeat the process with the remaining dough balls.

Serve the mixed grain parathas hot with your choice of accompaniments. Here are some serving suggestions:

Masala khichdi using moringa powder:

Ingredients:
– 1 cup rice
– 1/2 cup Yellow Tuar dal
– 1/4 cup Methi leaves finely chopped,
– 1 onion, finely chopped
– 1 tomato, finely chopped
– 1 carrot, diced
– 1/2 cup peas
– 2-3 cloves garlic, minced
– 1-inch ginger, minced
– 1 green chili, chopped (optional, adjust to taste)
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon coriander powder
– 1/2 teaspoon garam masala
– 1 tablespoon Le’ayur moringa powder
– 1/2 teaspoon Red chilly powder,
– Salt to taste
– 2 tablespoons ghee or oil
– 4 cups water
– Fresh coriander leaves for garnish

Instructions:
1. Wash rice and lentils together until the water runs clear. Soak them for 20-30 minutes.
2. Heat ghee or oil in a pressure cooker or a deep pan. Add cumin seeds and mustard seeds. Let them splutter.
3. Add chopped onions, ginger, garlic, and green chili. Sauté until onions turn translucent.
4. Add chopped tomatoes and cook until they turn mushy.
5. Now add Methi Leaves, diced carrots, peas, turmeric powder, coriander powder, red chilly powder and garam masala. Mix well and cook for a couple of minutes.
6. Drain the soaked rice and lentils and add them to the pan. Mix well with the vegetables.
7. Add moringa powder and salt to taste. Stir everything together.
8. Pour in 4 cups of water and mix well. Adjust salt if needed.
9. If using a pressure cooker, close the lid and cook for 3 whistles on medium heat. If using a pan, cover and cook until rice and lentils are soft and fully cooked, stirring occasionally. It may take around 20-25 minutes.
10. Once cooked, let the pressure release naturally. If using a pan, check the consistency and add more water if needed.
11. Garnish with fresh coriander leaves before serving.
